VEGETARIAN GRAPE LEAVES
Tabbouleh is a Levantine vegetarian salad made mostly of finely chopped parsley, with tomatoes, mint, onion, bulgur, and seasoned with olive oil, lemon juice, salt and pepper. Some variations add garlic or lettuce, or use couscous instead of bulgur.
Kibbeh nayyeh or raw kibbeh is a Levantine mezze. It consists of minced raw lamb or beef mixed with fine bulgur and spices. Kibbeh nayyeh is often served with mint leaves, olive oil, and green onions. Pita bread is used to scoop it. Sometimes a sauce of garlic or olive oil is served.
Essentially the vegetarian stuffed grape leaves is
a mixture of short-grains rice, tomatoes, parsley,
green onions, green peppers, garlic and crushed
red peppers, with lots of lemon juice and lots of
olive oil
